Baked Cinnamon Apple Dessert Recipe

I know that there are great foods out there that easy to make, great for you and very tasty. I have to admit though, that I often get caught in that cycle of just eating the quickest, easiest thing around. But I really want to turn that around. Of course, I don’t always eat poorly, but I do fall off the “Healthy” wagon from time to time. I believe choosing nutritious foods is a habit. My theory is that our body will send us cravings of foods that we are familiar with eating to obtain the nutrition needed for our bodies. So, if we are used to eating junk foods or less nutritious foods, that will be what our bodies tell us to go for to get certain nutrient. If, however, we develop the habit of eating healthier foods like fruits and veggies, I believe our bodies will begin to crave those items to meet daily nutritional needs. I’m not a nutritionist, but that’s my thought. So, I’ve decided to put some energy into looking for yummy foods that are healthy and quick to make.

Here is a tasty treat that satisfied my “sweet” craving tonight. It’s super fast to prepare and once in the over, you can forget about it until it’s done.

Baked Red Delicious Apples Recipe

2 Red Delicious Apples, cored and sliced.
Sugar to taste
Cinnamon to taste
1 scoop Soy Vanilla Ice Cream
Sprinkle of ground flax seed

Place the sliced apples in a baking dish. Sprinkle with water, sugar and cinnamon and bake at 375 for 20-30 minutes or until apples are tender. I baked mine in my toaster oven. Hot out of the over, I scoop a serving of the apples into a bowl and top with a scoop of soy vanilla ice cream and sprinkle with ground flax seed for a little extra flavor. Yum! Tasted almost like hot apple pie!

So surprisingly yummy that I never got a chance to take a photo. I guess I will just have to make it again. :-P
